Boerewors
Boerewors is a traditional South African sausage made from beef, mixed with either pork or lamb and a mixture of spices. It is often barbecued, but can be cooked in an oven or pan.
Ingredients - Serves 4
- Sausage casings - 10 feet
- Worcestershire sauce - 2 tablespoons
- Brown vinegar - 2 tablespoons
- Dried cloves - 1/8 teaspoon, ground
- Allspice - 1/4 teaspoon, ground
- Nutmeg - 1/4 teaspoon, ground
- Black pepper - 1 teaspoon, freshly ground
- Salt - 2 teaspoons
- Coriander seeds - 2 tablespoons, toasted and ground
- Pork fat - 200g, coarsely ground
- Beef - 1 kg, coarsely ground
Let's Get Started
- In a large bowl, mix together the ground beef, pork fat, coriander, salt, pepper, nutmeg, allspice, and cloves.
- Add the vinegar and Worcestershire sauce to the meat mixture and mix well.
- Rinse the sausage casings in warm water and keep in a bowl of warm water.
- Using a sausage stuffer, stuff the meat mixture into the casings.
- Twist the sausages into links or leave as one long sausage.
- Grill the boerewors over medium-high heat, turning often, until browned and cooked through, about 20 minutes.
- Serve the boerewors hot with your favorite side dishes.
