Let's Get Started

  1. In a large pot, bring the water to a boil.
  2. Add the rice and reduce the heat to low. Simmer for 30 minutes, or until the rice is cooked and the mixture thickens.
  3. Add the mixed vegetables, shredded chicken, minced garlic, grated ginger, fish sauce, salt, and black pepper. Cook for another 15 minutes, stirring occasionally.
  4. Taste and adjust the seasoning if needed.
  5. Serve hot, garnished with chopped green onions, cilantro, and lime wedges.
