Bo Bia
Bo Bia is a refreshing Vietnamese street food roll filled with jicama, eggs, Chinese sausage, and shrimp. It's served with a hoisin peanut sauce for dipping.
Ingredients - Serves 4
- Crushed peanuts - 1/4 cup
- Hoisin sauce - 1/2 cup
- Fresh basil leaves - 1 bunch
- Rice paper wrappers - 12
- Cooked shrimp - 1 cup, peeled and deveined
- Eggs - 4, beaten
- Chinese sausage - 4 links, thinly sliced
- Carrots - 2, peeled and julienned
- Jicama - 1 medium, peeled and julienned
Let's Get Started
- In a pan over medium heat, cook the julienned jicama and carrots until they are soft. Set aside.
- In the same pan, cook the Chinese sausage until it's crispy. Set aside.
- In another pan, make thin omelettes with the beaten eggs. Once cooked, cut them into thin strips.
- To assemble the rolls, dip a rice paper wrapper in warm water until it's soft. Lay it flat on a clean surface.
- Place a small amount of the cooked jicama, carrots, Chinese sausage, egg strips, and shrimp on the wrapper. Top with a few basil leaves.
- Roll the wrapper tightly, tucking in the sides as you go.
- Repeat with the remaining wrappers and filling.
- For the dipping sauce, mix the hoisin sauce with the crushed peanuts.
- Serve the rolls with the dipping sauce.
