Let's Get Started

  1. Soak the rice paper wrappers in warm water until soft and pliable, about 30 seconds.
  2. Lay a rice paper wrapper flat on a clean surface. In the center, place two shrimp, a small handful of rice noodles, a few pieces of carrot and cucumber, and a sprinkle of mint and cilantro.
  3. Fold the bottom of the wrapper up over the filling, then fold in the sides and roll up tightly.
  4. Repeat with the remaining wrappers and filling.
  5. Serve the rolls with sweet chili sauce for dipping.
