Russian Hill Rice Paper Rolls
These fresh and healthy rice paper rolls are filled with crisp vegetables, tender shrimp, and served with a tangy dipping sauce. They're a perfect appetizer or light meal.
Ingredients - Serves 4
- Sweet chili sauce - For dipping
- Fresh cilantro leaves - 1/2 cup
- Fresh mint leaves - 1/2 cup
- Cucumber - 1, julienned
- Carrot - 1, julienned
- Rice noodles - 1 cup, cooked
- Cooked shrimp - 16, peeled and deveined
- Rice paper wrappers - 8
Let's Get Started
- Soak the rice paper wrappers in warm water until soft and pliable, about 30 seconds.
- Lay a rice paper wrapper flat on a clean surface. In the center, place two shrimp, a small handful of rice noodles, a few pieces of carrot and cucumber, and a sprinkle of mint and cilantro.
- Fold the bottom of the wrapper up over the filling, then fold in the sides and roll up tightly.
- Repeat with the remaining wrappers and filling.
- Serve the rolls with sweet chili sauce for dipping.
