Blueberry Scones
These delicious blueberry scones are perfect for a breakfast treat or afternoon snack. They're packed with juicy blueberries and topped with a sweet glaze.
Ingredients - Serves 8
- Lemon juice - 2 tablespoons, for glaze
- Powdered sugar - 1/2 cup, for glaze
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Whole milk - 1/2 cup
- Fresh blueberries - 1 cup
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/2 teaspoon
- Baking powder - 1 tablespoon
- Granulated sugar - 1/3 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter and use your fingers to work it into the flour until the mixture resembles coarse crumbs.
- Stir in the blueberries.

- While the scones are baking, make the glaze by whisking together the powdered sugar and lemon juice.
- Once the scones have cooled slightly, drizzle them with the glaze.
