Spelt Pancakes with Apple Compote

Ingredients - Serves 4
- Lemon juice - 1 tablespoon
- Cinnamon - 1 teaspoon
- Brown sugar - 1/4 cup
- Apples - 3, peeled and diced
- Butter - 2 tablespoons, melted
- Honey - 2 tablespoons
- Milk - 1 1/2 cups
- Eggs - 2
- Salt - 1/2 teaspoon
- Baking powder - 1 tablespoon
- Spelt flour - 2 cups
Let's Get Started
- In a large bowl, combine the spelt flour, baking powder, and salt.
- In another bowl, whisk together the eggs, milk, honey, and melted butter. Pour this into the flour mixture and stir until just combined.
- Heat a griddle or large skillet over medium heat. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
