Blt Eggs Benedict
A delicious twist on the classic Eggs Benedict, this recipe incorporates the flavors of a BLT sandwich.
Ingredients - Serves 4
- Salt and pepper - To taste
- Hollandaise sauce - 1 cup
- Eggs - 4, poached
- English muffins - 4, split and toasted
- Tomatoes - 2, sliced
- Lettuce - 4 leaves
- Bacon - 8 slices
Let's Get Started
- Cook the bacon in a large skillet over medium heat until crispy. Remove from the skillet and drain on paper towels.
- Assemble the BLT sandwiches by placing a lettuce leaf and two slices of tomato on the bottom half of each English muffin. Top with two slices of bacon.
- Place a poached egg on top of the bacon on each sandwich.
