Ingredients - Serves 4
- Parsley - For garnish
- Salt and pepper - To taste
- Eggs - 4
- Paprika - 1 teaspoon
- Tomatoes - 2, chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, finely chopped
- Onion - 1, finely chopped
- Ham - 100 grams, diced
- Chorizo - 100 grams, sliced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large frying pan over medium heat.
- Add the chorizo and ham and cook until browned, about 5 minutes.
- Add the onion, bell pepper, and garlic and cook until the vegetables are soft, about 5 minutes.
- Add the tomatoes and paprika and cook until the tomatoes are soft, about 5 minutes.
- Make four wells in the mixture and crack an egg into each well.
- Cover the pan and cook until the eggs are done to your liking, about 5 minutes for runny yolks.
- Season with salt and pepper and garnish with parsley before serving.
