Let's Get Started

  1. Heat the olive oil in a large frying pan over medium heat.
  2. Add the chorizo and ham and cook until browned, about 5 minutes.
  3. Add the onion, bell pepper, and garlic and cook until the vegetables are soft, about 5 minutes.
  4. Add the tomatoes and paprika and cook until the tomatoes are soft, about 5 minutes.
  5. Make four wells in the mixture and crack an egg into each well.
  6. Cover the pan and cook until the eggs are done to your liking, about 5 minutes for runny yolks.
  7. Season with salt and pepper and garnish with parsley before serving.
