Blackberry Glazed Chicken
This is a delicious and tangy dish of chicken glazed with a blackberry sauce.
Ingredients - Serves 4
- Water - 2 tablespoons
- Cornstarch - 1 tablespoon
- Balsamic vinegar - 2 tablespoons
- Sugar - 1/4 cup
- Blackberries - 2 cups, fresh or frozen
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Chicken breasts - 4, boneless and skinless
Let's Get Started
- Season the chicken breasts with salt and pepper.
- Heat the olive oil in a skillet over medium heat. Add the chicken and cook until browned on both sides, about 10 minutes.
- While the chicken is cooking, combine the blackberries, sugar, and balsamic vinegar in a saucepan. Bring to a boil, then reduce heat and simmer until the blackberries are soft, about 10 minutes.
- In a small bowl, mix the cornstarch with the water to make a slurry. Stir this into the blackberry sauce and cook until the sauce has thickened, about 2 minutes.
- Pour the blackberry sauce over the cooked chicken in the skillet. Cook for an additional 5 minutes, until the chicken is cooked through and the sauce is sticky and glazed.
- Serve the chicken with extra blackberry sauce on the side.
