Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the split peas and water. Bring to a boil, then reduce the heat and simmer until the peas are soft, about 45 minutes.
  4. Remove from the heat and let cool slightly.
  5. Transfer the mixture to a blender or food processor and puree until smooth.
  6. Stir in the lemon juice and season with salt and pepper.
  7. Serve warm or at room temperature.
