Fava
Fava is a traditional Greek dish made from yellow split peas. This creamy puree is a perfect appetizer or side dish.
Ingredients - Serves 4
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Water - 3 cups
- Garlic - 2 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Yellow split peas - 1 cup
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the split peas and water. Bring to a boil, then reduce the heat and simmer until the peas are soft, about 45 minutes.
- Remove from the heat and let cool slightly.
- Transfer the mixture to a blender or food processor and puree until smooth.
- Stir in the lemon juice and season with salt and pepper.
- Serve warm or at room temperature.
