Blackberry Crumb Cake
This delicious blackberry crumb cake is made with fresh blackberries and a buttery crumb topping.
Ingredients - Serves 8
- Cinnamon - 1 teaspoon
- Brown sugar - 1/2 cup
- Fresh blackberries - 2 cups
- Vanilla extract - 1 teaspoon
- Milk - 1/2 cup
- Egg - 1
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/2 teaspoon
- Baking powder - 2 teaspoons
- Granulated sugar - 1 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F and grease a 9-inch square baking dish.
- In a large bowl, combine the flour, granulated sugar, baking powder, and salt.
- Add the cold cubed butter to the dry ingredients and use a pastry cutter or your fingers to cut it into the mixture until it resembles coarse crumbs.
- In a separate bowl, whisk together the egg, milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spread half of the batter into the prepared baking dish.
- Sprinkle half of the blackberries over the batter.
- In a small bowl, mix together the brown sugar and cinnamon.
- Sprinkle half of the brown sugar mixture over the blackberries.
- Repeat the layers with the remaining batter, blackberries, and brown sugar mixture.
- Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool for 10 minutes before serving.
