Biksemad
Biksemad is a traditional Danish dish made with diced potatoes, onions, and leftover meat.
Ingredients - Serves 4
- Parsley - For garnish
- Pickled beets - For serving
- Eggs - 4
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Leftover meat - 2 cups, diced (e.g. beef, pork, or chicken)
- Onion - 1 large, diced
- Potatoes - 4 large, peeled and diced
Let's Get Started
- Boil the diced potatoes in salted water until tender. Drain and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the diced onion and cook until translucent.
- Add the diced leftover meat and cook until heated through.
- Add the boiled potatoes to the skillet and season with salt and pepper. Cook for a few minutes until the potatoes are golden brown.
- In a separate non-stick pan, fry the eggs to your desired doneness.
- Serve the biksemad hot, topped with a fried egg, pickled beets, and garnished with parsley.
