Bicol Express

- Cooking oil - 2 tablespoons
- Salt and pepper - To taste
- Fish sauce - 2 tablespoons
- Red chili peppers - 2-3, sliced
- Green chili peppers - 5-6, sliced
- Ginger - 1 thumb-sized piece, minced
- Garlic - 4 cloves, minced
- Onion - 1, chopped
- Shrimp paste - 2 tablespoons
- Coconut milk - 2 cups
- Pork belly - 500 grams, sliced into thin strips
Let's Get Started
- Heat the cooking oil in a large pan over medium heat.
- Add the onion, garlic, and ginger. Sauté until fragrant.
- Add the pork belly and cook until browned.
- Pour in the coconut milk and bring to a simmer.
- Add the shrimp paste, green chili peppers, and red chili peppers. Stir well.
- Season with fish sauce, salt, and pepper. Adjust the seasoning according to your taste.
- Simmer for 30 minutes or until the pork is tender and the flavors have melded together.
- Serve hot with steamed rice.
