  1. Heat the oil in a wok or large frying pan over medium heat.
  2. Add the tofu and fry until golden on all sides. Remove and set aside.
  3. In the same pan, add the garlic and ginger and fry until fragrant.
  4. Add the bell peppers and stir-fry for a few minutes until they begin to soften.
  5. In a small bowl, mix together the soy sauce, vinegar, and sugar. Pour this into the pan and stir well.
  6. Return the tofu to the pan and stir to coat in the sauce.
  7. Stir in the cornstarch mixture and cook for a few more minutes until the sauce has thickened.
  8. Serve the Beijing-style tofu hot with steamed rice.
