Beetroot Burger
A delicious and healthy vegetarian burger made with beetroot and chickpeas.
Ingredients - Serves 4
- Lettuce, tomato, and condiments - As needed
- Burger buns - 4
- Olive oil - 2 tablespoons
- Egg - 1
- Breadcrumbs - 1/2 cup
- Salt and pepper - To taste
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 2 cloves, minced
- Chickpeas - 1 can, drained and rinsed
- Beetroot - 2 large, cooked and grated
Let's Get Started
- In a food processor, combine the beetroot, chickpeas, garlic, cumin, coriander, salt, and pepper. Pulse until well combined.
- Transfer the mixture to a bowl and stir in the breadcrumbs and egg.
- Form the mixture into 4 patties.
- Heat the olive oil in a pan over medium heat. Cook the patties for 5 minutes on each side, or until golden and heated through.
- Serve the burgers on the buns with lettuce, tomato, and your favorite condiments.
