Beans and Rice
This flavorful beans and rice dish is a staple in many cuisines and is packed with protein and fiber.
Ingredients - Serves 6
- Lime - 1, juiced
- Cilantro - 2 tablespoons, chopped
- Vegetable broth - 2 cups
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Bell pepper - 1, diced
- Garlic - 3 cloves, minced
- Onion - 1 medium, diced
- Black beans - 1 can, drained and rinsed
- Rice - 2 cups
Let's Get Started
- Cook the rice according to package instructions.
- In a large skillet, heat some oil over medium heat.
- Add the diced onion, minced garlic, and diced bell pepper. Cook until softened, about 5 minutes.
- Add the cumin, paprika, salt, and black pepper. Stir to combine.
- Add the drained and rinsed black beans to the skillet. Stir to combine with the spices and vegetables.
- Pour in the vegetable broth and bring to a simmer. Cook for 15-20 minutes, until the beans are heated through and the flavors are well combined.
