Bean and Rice Burrito Bowl
A hearty and healthy burrito bowl packed with black beans, rice, and a variety of toppings.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Sour cream - 1/4 cup
- Salsa - 1/2 cup
- Cheese - 1 cup, shredded
- Avocado - 1, sliced
- Tomatoes - 2, diced
- Corn - 1 cup, frozen or fresh
- Black beans - 1 can, drained and rinsed
- Rice - 1 cup
Let's Get Started
- Cook the rice according to the package instructions.
- While the rice is cooking, heat the black beans and corn in a small saucepan over medium heat until warmed through.
