Elote
Elote, or Mexican street corn, is a popular street food in Mexico, and is often served on a stick, though you can skip the skewer and make it straight on the grill.
Ingredients - Serves 4
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Chili powder - 1 teaspoon
- Cotija cheese - 1/2 cup, crumbled
- Mayonnaise - 1/4 cup
- Corn - 4 ears
Let's Get Started
- Preheat your grill to medium-high heat.
- Grill the corn, turning occasionally, until it's cooked and slightly charred, about 10 minutes.
- Spread a layer of mayonnaise on each ear of corn.
- Sprinkle the crumbled cotija cheese evenly over the corn.
- Sprinkle the chili powder and chopped cilantro over the corn.
- Serve with lime wedges. Squeeze lime juice over the corn before eating.
