Bc Spot Prawn Bisque
A rich and creamy bisque made with fresh BC spot prawns. Perfect for a special occasion or a cozy dinner at home.
Ingredients - Serves 4
- Fresh parsley - For garnish
- Salt and pepper - To taste
- Heavy cream - 1 cup
- Fish stock - 4 cups
- Dry white wine - 1/2 cup
- Tomato paste - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Butter - 2 tablespoons
- Bc spot prawns - 1 pound, peeled and deveined
Let's Get Started
- Melt the butter in a large pot over medium heat.
- Add the onion and garlic and cook until soft, about 5 minutes.
- Add the tomato paste and cook for another 2 minutes.
- Add the wine and bring to a boil. Cook until the wine is reduced by half, about 5 minutes.
- Add the fish stock and bring to a simmer. Cook for 20 minutes.
- Add the prawns and cook until they are pink and cooked through, about 5 minutes.
- Use an immersion blender to puree the soup until smooth.
- Stir in the heavy cream and season with salt and pepper.
- Ladle the bisque into bowls and garnish with fresh parsley before serving.
