Bc Spot Prawn Bisque

Ingredients - Serves 4

Let's Get Started

  1. Melt the butter in a large pot over medium heat.
  2. Add the onion and garlic and cook until soft, about 5 minutes.
  3. Add the tomato paste and cook for another 2 minutes.
  4. Add the wine and bring to a boil. Cook until the wine is reduced by half, about 5 minutes.
  5. Add the fish stock and bring to a simmer. Cook for 20 minutes.
  6. Add the prawns and cook until they are pink and cooked through, about 5 minutes.
  7. Use an immersion blender to puree the soup until smooth.
  8. Stir in the heavy cream and season with salt and pepper.
  9. Ladle the bisque into bowls and garnish with fresh parsley before serving.
