Bawan
Bawan is a Taiwanese meatball made from a dough of sweet potato starch, rice flour, and water, which is filled with a savory stuffing.
Ingredients - Serves 4
- White pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Soy sauce - 2 tablespoons
- Bamboo shoots - 1/2 cup, finely chopped
- Shiitake mushrooms - 1/2 cup, finely chopped
- Ground pork - 1/2 pound
- Water - 1 cup
- Rice flour - 1/2 cup
- Sweet potato starch - 1 cup
Let's Get Started
- In a bowl, mix together the sweet potato starch, rice flour, and water to form a dough. Let it rest for 30 minutes.
- In a separate bowl, mix together the ground pork, shiitake mushrooms, bamboo shoots, soy sauce, sugar, salt, and white pepper.
- Divide the dough into small balls and flatten each one into a disc. Place a spoonful of the pork mixture in the center of each disc and seal the edges to form a ball.
- Steam the bawan over high heat for 15 minutes, or until the dough becomes translucent.
- Serve hot with soy sauce or chili sauce for dipping.
