Har Gow
Har Gow is a traditional Cantonese dumpling served in dim sum. The dumpling is filled with shrimp and wrapped in a thin, translucent skin.
Ingredients - Serves 4
- Lard - 2 tablespoons
- Boiling water - 1 cup
- Tapioca starch - 1/2 cup
- Wheat starch - 1 cup
- White pepper - 1/4 teaspoon
- Sugar - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Sesame oil - 1 teaspoon
- Cornstarch - 1 tablespoon
- Bamboo shoots - 1/4 cup, finely chopped
- Shrimp - 1 pound, peeled and deveined
Let's Get Started
- In a bowl, combine the shrimp, bamboo shoots, cornstarch, sesame oil, salt, sugar, and white pepper. Mix well and set aside.
- In another bowl, combine the wheat starch and tapioca starch. Gradually add the boiling water, stirring until a dough forms. Add the lard and knead until smooth.
- Divide the dough into small pieces and roll each piece into a thin circle.
- Place a spoonful of the shrimp filling in the center of each dough circle. Fold the dough over the filling and pinch the edges to seal.
- Place the dumplings in a steamer and steam over high heat for about 10 minutes, or until the shrimp is cooked through.
