Barszcz
Barszcz is a traditional Polish beet soup that is rich in flavor and vibrant in color.
Ingredients - Serves 6
- Fresh dill - 2 tablespoons, chopped
- Sour cream - 6 tablespoons
- Salt and pepper - To taste
- Bay leaf - 1
- Sugar - 1 tablespoon
- Apple cider vinegar - 2 tablespoons
- Vegetable broth - 6 cups
- Garlic - 2 cloves, minced
- Onion - 1 large, finely chopped
- Beets - 4 medium, peeled and grated
Let's Get Started
- In a large pot, sauté the onion and garlic until translucent.
- Add the grated beets and cook for 5 minutes, stirring occasionally.
- Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- Stir in the apple cider vinegar, sugar, salt, and pepper. Simmer for an additional 10 minutes.
- Remove the bay leaf and adjust the seasoning if needed.
- Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
