Barmbrack
Barmbrack is a traditional Irish fruitcake enjoyed around Halloween. It's a sweet, yeasted bread filled with dried fruit and often served with tea.
Ingredients - Serves 8
- Salt - 1/2 teaspoon
- Nutmeg - 1/2 teaspoon
- Cinnamon - 1 teaspoon
- Yeast - 1 packet
- Egg - 1
- Butter - 2 tablespoons
- Brown sugar - 1/2 cup
- All-purpose flour - 2 cups
- Hot black tea - 1 cup
- Dried mixed fruit - 1 cup
Let's Get Started
- Soak the dried fruit in the hot tea for 1-2 hours, or until the fruit is plump and the tea is cool.
- In a large bowl, combine the flour, sugar, yeast, cinnamon, nutmeg, and salt.
- Melt the butter and beat the egg. Add both to the flour mixture.
- Drain the fruit, reserving the tea. Add the fruit to the dough and mix well.
- Gradually add the reserved tea until the dough is soft but not sticky.
- Knead the dough on a floured surface for about 10 minutes, or until it's smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until it's doubled in size.
- Preheat your oven to 375°F (190°C).
- Punch down the dough and shape it into a round loaf. Place it on a baking sheet and let it rise again for about 30 minutes.
- Bake the barmbrack for about 45-60 minutes, or until it's golden brown and sounds hollow when tapped on the bottom.
- Let the barmbrack cool on a wire rack before slicing and serving.
