Chicago Mix Popcorn
A delicious blend of sweet caramel popcorn and savory cheddar cheese popcorn, known as the famous Chicago Mix.
Ingredients - Serves 6
- Cheddar cheese powder - 1/4 cup
- Vanilla extract - 1/2 teaspoon
- Baking soda - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Corn syrup - 2 tablespoons
- Brown sugar - 1/2 cup
- Butter - 1/4 cup
- Vegetable oil - 2 tablespoons
- Popcorn kernels - 1/2 cup
Let's Get Started
- Heat the vegetable oil in a large pot over medium heat. Add the popcorn kernels and cover the pot. Shake the pot occasionally to prevent the kernels from burning. Once the popping slows down, remove the pot from the heat and let it sit for a minute to allow any remaining kernels to pop.
- Preheat your oven to 250°F (120°C). Spread the popcorn out on two baking sheets and keep warm in the oven while you prepare the caramel and cheese coatings.
- To make the caramel coating, melt the butter in a saucepan over medium heat. Stir in the brown sugar and corn syrup. Bring to a boil while stirring consistently. Allow it to boil for 4 minutes without stirring. Remove from heat and stir in the baking soda and vanilla extract. Immediately pour the caramel over half of the popcorn. Use tongs to toss and coat the popcorn in the caramel. Return to the oven to keep warm.
- For the cheese coating, melt the remaining butter in the saucepan. Stir in the cheddar cheese powder and salt until smooth. Pour over the remaining popcorn and toss to coat.
- Mix the caramel coated and cheese coated popcorn together for the classic Chicago Mix. Enjoy!
