Banh Mi Bowl
This Banh Mi Bowl is a deconstructed version of the classic Vietnamese sandwich, with marinated pork, pickled veggies, and a spicy mayo sauce.
Ingredients - Serves 4
- Cooked rice - 4 cups
- Sriracha - 2 tablespoons
- Mayonnaise - 1/2 cup
- Jalapeno - 1, sliced
- Radishes - 4, sliced
- Cucumber - 1, julienned
- Carrots - 2, julienned
- Rice vinegar - 1/4 cup
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Honey - 2 tablespoons
- Soy sauce - 1/4 cup
- Pork tenderloin - 1 pound, sliced
Let's Get Started
- In a large bowl, whisk together the soy sauce, honey, garlic, ginger, and rice vinegar.
- Add the sliced pork and toss to coat. Let marinate for at least 30 minutes.
- Preheat the oven to 400°F.
- Place the marinated pork on a baking sheet and bake for 15-20 minutes, or until cooked through.
