Banh Mi
This classic Vietnamese sandwich is made with a baguette, pickled vegetables, and a variety of meats.
Ingredients - Serves 4
- Ham - 1/2 pound, cooked and sliced
- Chicken - 1/2 pound, cooked and sliced
- Pork belly - 1/2 pound, cooked and sliced
- Lime - 1, cut into wedges
- Cilantro - 1/4 cup, chopped
- Jalapeno - 1, thinly sliced
- Cucumber - 1, thinly sliced
- Salt - 1 teaspoon
- Sugar - 2 tablespoons
- White vinegar - 1/4 cup
- Daikon radish - 1 cup, julienned
- Carrots - 1 cup, julienned
- Sriracha - 2 tablespoons
- Mayonnaise - 1/4 cup
- Baguette - 1, cut into 4 pieces
Let's Get Started
- Preheat the oven to 350°F.
- Split the baguette into 4 pieces and place on a baking sheet.
- Bake for 10 minutes, or until lightly toasted.
- In a small bowl, mix together the mayonnaise and sriracha.
- In a separate bowl, mix together the carrots, daikon radish, vinegar, sugar, and salt.
- Spread the mayonnaise mixture on the toasted baguette pieces.
- Top with the pickled vegetables, cucumber, jalapeno, cilantro, and lime wedges.
- Top with the pork belly, chicken, and ham slices.
- Serve immediately.
