Let's Get Started

  1. Peel the potatoes and cut into small chunks. Boil until tender, then drain and mash while still hot.
  2. Boil the diced carrot until tender, then drain.
  3. In a bowl, combine the cucumber and a pinch of salt. Let sit for 10 minutes, then squeeze out the excess water.
  4. Do the same with the onion slices.
  5. In a large bowl, combine the mashed potato, carrot, cucumber, onion, and ham.
  6. In a separate bowl, mix the mayonnaise and rice vinegar. Add salt and pepper to taste.
  7. Add the dressing to the potato mixture and mix well.
  8. Chill in the fridge for at least an hour before serving.
