Japanese Potato Salad
Japanese Potato Salad is a delicious blend of mashed potato, mixed vegetables and a creamy, tangy dressing. It's a popular side dish in Japan, often found in bento boxes.
Ingredients - Serves 4
- Salt and pepper - To taste
- Rice vinegar - 1 tablespoon
- Mayonnaise - 1/3 cup
- Ham - 4 slices, diced
- Onion - 1/2 small, thinly sliced
- Cucumber - 1 small, thinly sliced
- Carrot - 1 medium, diced
- Potatoes - 4 medium
Let's Get Started
- Peel the potatoes and cut into small chunks. Boil until tender, then drain and mash while still hot.
- Boil the diced carrot until tender, then drain.
- In a bowl, combine the cucumber and a pinch of salt. Let sit for 10 minutes, then squeeze out the excess water.
- Do the same with the onion slices.
- In a large bowl, combine the mashed potato, carrot, cucumber, onion, and ham.
- In a separate bowl, mix the mayonnaise and rice vinegar. Add salt and pepper to taste.
- Add the dressing to the potato mixture and mix well.
- Chill in the fridge for at least an hour before serving.
