Banh Dau Xanh
Banh Dau Xanh is a traditional Vietnamese dessert made with mung beans and coconut milk.
Ingredients - Serves 8
- Sesame seeds - 1 tablespoon
- Salt - 1/4 teaspoon
- Pandan leaves - 2 leaves
- Water - 1/2 cup
- Sugar - 1/2 cup
- Coconut milk - 1 cup
- Glutinous rice flour - 1 cup
- Mung beans - 1 cup
Let's Get Started
- Soak the mung beans in water for 2 hours, then drain.
- In a pot, add the mung beans, water, and pandan leaves. Bring to a boil, then reduce heat and simmer until the beans are soft, about 20 minutes.
- Remove the pandan leaves and blend the cooked mung beans into a smooth paste.
- In a separate bowl, mix the glutinous rice flour, coconut milk, sugar, and salt until well combined.
- Add the mung bean paste to the bowl and mix until smooth.
- Pour the mixture into a greased baking dish and sprinkle sesame seeds on top.
- Bake in a preheated oven at 350°F for 40 minutes, or until the cake is set and golden brown.
- Allow the cake to cool before cutting into squares or rectangles.
- Serve the Banh Dau Xanh as a delicious Vietnamese dessert.
