Koulouri Thessalonikis
Koulouri Thessalonikis are a popular Greek street food. These sesame bread rings are crunchy on the outside, soft and fluffy on the inside, and have a delicious sesame flavor.
Ingredients - Serves 10
- Sesame seeds - 1 cup
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- All-purpose flour - 3 cups
- Dry yeast - 2 teaspoons
- Sugar - 1 tablespoon
- Warm water - 1 cup
Let's Get Started
- In a small bowl, combine the warm water and sugar. Stir until the sugar is dissolved. Sprinkle the yeast over the water and let it sit for 5 minutes, or until it becomes frothy.
- In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough forms.
- Turn the dough out onto a lightly floured surface and knead for about 10 minutes, or until it is smooth and elastic.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Punch down the dough and divide it into 10 equal pieces. Roll each piece into a long rope, then join the ends to form a ring. Dip each ring in water, then in the sesame seeds, making sure they are well coated.
- Place the rings on the prepared baking sheet and let them rise for another 15 minutes.
- Bake for 20 minutes, or until they are golden brown. Let them cool on a wire rack before serving.
