Banga Soup
Banga Soup, also known as Ofe Akwu, is a traditional Nigerian soup made with palm fruit extract, assorted meat, and spices.
Ingredients - Serves 6
- Water - 4 cups
- Salt - To taste
- Seasoning cubes - 2
- Utazi leaves - A handful, chopped
- Uziza leaves - A handful, chopped
- Fresh pepper - 2-3 scotch bonnet peppers, blended
- Onions - 1 medium-sized, chopped
- Crayfish - 2 tablespoons
- Dried fish - 100g
- Stockfish - 100g
- Assorted meat (beef, goat meat, or chicken) - 500g
- Palm fruit extract - 2 cups
Let's Get Started
- In a large pot, add the palm fruit extract and water. Boil for 20 minutes to soften the extract.
- Add the assorted meat, stockfish, dried fish, onions, and seasoning cubes. Cook on medium heat for 30 minutes or until the meat is tender.
- Add the crayfish, fresh pepper, and salt. Stir well and let it simmer for another 10 minutes.
- Add the chopped uziza leaves and utazi leaves. Stir and cook for an additional 5 minutes.
- Taste and adjust the seasoning if needed.
- Serve hot with your choice of swallow (e.g., pounded yam, fufu, or eba).
