Banana Leaf Rice
Banana Leaf Rice is a traditional South Indian dish where rice is served on a banana leaf along with various side dishes.
Ingredients - Serves 4
- Papadums - 4
- Tomato - 1, sliced
- Cucumber - 1, sliced
- Lemon juice - 1 tablespoon
- Salt - To taste
- Chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Curry leaves - 10 leaves
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1 teaspoon
- Coconut oil - 2 tablespoons
- Banana leaves - 4 large leaves
- Basmati rice - 2 cups
Let's Get Started
- Cook the basmati rice according to package instructions and set aside.
- Wash the banana leaves and pat them dry.
- Heat coconut oil in a pan over medium heat.
- Add mustard seeds and cumin seeds. Let them splutter.
- Add curry leaves, chopped onion, minced garlic, and grated ginger. Saute until the onion turns golden brown.
- Add turmeric powder, chili powder, and salt. Mix well.
- Add the cooked rice to the pan and mix until well combined with the spices. Cook for 5 minutes.
- Drizzle lemon juice over the rice and mix well.
- Prepare the banana leaf by heating it over an open flame for a few seconds to make it pliable.
- Place a portion of the rice on the banana leaf and spread it out.
- Serve the banana leaf rice with sliced cucumber, tomato, and papadums.
