  1. Cook the basmati rice according to package instructions and set aside.
  2. Wash the banana leaves and pat them dry.
  3. Heat coconut oil in a pan over medium heat.
  4. Add mustard seeds and cumin seeds. Let them splutter.
  5. Add curry leaves, chopped onion, minced garlic, and grated ginger. Saute until the onion turns golden brown.
  6. Add turmeric powder, chili powder, and salt. Mix well.
  7. Add the cooked rice to the pan and mix until well combined with the spices. Cook for 5 minutes.
  8. Drizzle lemon juice over the rice and mix well.
  9. Prepare the banana leaf by heating it over an open flame for a few seconds to make it pliable.
  10. Place a portion of the rice on the banana leaf and spread it out.
  11. Serve the banana leaf rice with sliced cucumber, tomato, and papadums.
