Let's Get Started

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes to remove any dirt. Pat them dry with a paper towel.
  3. Poke several holes in each potato with a fork.
  4. Rub the potatoes with olive oil and sprinkle with salt and black pepper.
  5. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skins are crispy and the insides are tender.
  6. Remove the potatoes from the oven and let them cool for a few minutes.
  7. Cut a slit in the top of each potato and gently squeeze the ends to open them up.
  8. Top each potato with sour cream, chopped chives, crumbled bacon, and shredded cheddar cheese.
