Pinto Bean Casserole

Ingredients - Serves 6
- Green onions - 2, sliced
- Tortilla chips - 1 cup, crushed
- Shredded cheddar cheese - 1 cup
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Tomato sauce - 1 can (8 oz)
- Bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Ground beef - 1 lb
- Pinto beans - 2 cans (15 oz each), drained and rinsed
Let's Get Started
- Preheat the oven to 375°F.
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook until the vegetables are tender, about 5 minutes.
- Stir in the drained and rinsed pinto beans, tomato sauce, cumin, chili powder, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Transfer the mixture to a greased 9x13-inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Spread the crushed tortilla chips over the cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
