Air Fryer Potato Skins
These crispy and delicious potato skins are made in the air fryer for a healthier twist on a classic appetizer.
Ingredients - Serves 4
- Sour cream - 1/2 cup
- Green onions - 2, thinly sliced
- Bacon - 4 slices, cooked and crumbled
- Shredded cheddar cheese - 1 cup
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Potatoes - 4 medium-sized
Let's Get Started
- Preheat the air fryer to 400°F (200°C).
- Wash the potatoes and pat them dry. Pierce each potato several times with a fork.
- Place the potatoes in the air fryer basket and cook for 20-25 minutes, or until the skins are crispy and the insides are tender.
- Remove the potatoes from the air fryer and let them cool slightly.
- Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato on the skins.
- Brush the potato skins with olive oil and sprinkle with salt and black pepper.
- Place the potato skins back in the air fryer and cook for an additional 5 minutes, or until they are golden and crispy.
- Remove the potato skins from the air fryer and fill each skin with shredded cheddar cheese and crumbled bacon.
- Place the filled potato skins back in the air fryer and cook for another 2-3 minutes, or until the cheese is melted.
- Remove the potato skins from the air fryer and top with sliced green onions.
- Serve the air fryer potato skins with sour cream on the side for dipping.
