Bacon Onion Spaetzle

Ingredients - Serves 4

Let's Get Started

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.
  2. In the same skillet, add the onions and cook until they are caramelized, about 10 minutes.
  3. In a large bowl, whisk together the eggs, milk, flour, salt, and nutmeg until smooth.
  4. Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through the holes into the boiling water.
  5. Cook the spaetzle until they float to the surface, then remove them with a slotted spoon and drain.
  6. In the same skillet, melt the butter over medium heat. Add the spaetzle, bacon, and onions and cook until the spaetzle is golden brown.
  7. Serve the spaetzle garnished with the chopped parsley.
