Bacon and Sweet Potato Hash
This delicious bacon and sweet potato hash is a hearty and flavorful breakfast or brunch option.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped
- Cayenne pepper - 1/4 teaspoon
- Paprika - 1 teaspoon
- Salt and pepper - To taste
- Bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Sweet potatoes - 2 medium, peeled and diced
- Bacon - 6 slices, chopped
Let's Get Started
- In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside.
- In the same skillet, add the diced sweet potatoes and cook for about 5 minutes, until they start to soften.
- Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook for another 5 minutes, until the vegetables are tender.
- Season the mixture with salt, pepper, paprika, and cayenne pepper. Stir well to combine.
