Let's Get Started

  1. Preheat the oven to 400°F (200°C).
  2. Prick the eggplants with a fork and place them on a baking sheet. Roast in the oven for 30-40 minutes, or until the skin is charred and the flesh is soft.
  3. Remove the eggplants from the oven and let them cool. Once cooled, peel off the skin and discard.
  4. In a food processor, combine the roasted eggplant flesh, tahini, minced garlic, lemon juice, olive oil, and salt. Process until smooth and creamy.
  5. Transfer the baba ghanoush to a serving bowl and garnish with chopped parsley and pomegranate seeds.
  6. Serve with pita bread or your favorite dipping vegetables.
