Ba Wan is a Taiwanese mega dumpling, stuffed with a hearty filling of pork, bamboo shoots, and shiitake mushrooms. It's a popular street food item and is often served with a sweet and savory sauce.
Ingredients - Serves 4
- Sesame oil - 1 tablespoon
- White pepper - 1/2 teaspoon
- Rice wine - 1 tablespoon
- Sugar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Water - 2 cups
- Sweet potato starch - 1 cup
- Shiitake mushrooms - 4, finely chopped
- Bamboo shoots - 1/2 cup, finely chopped
- Ground pork - 1/2 pound

- In a bowl, mix the ground pork, bamboo shoots, and shiitake mushrooms. Season with soy sauce, sugar, rice wine, white pepper, and sesame oil.
- In another bowl, mix the sweet potato starch with water to form a dough.
- Divide the dough into small balls and flatten each ball into a round wrapper.
- Place a spoonful of the pork mixture in the center of each wrapper. Fold the edges of the wrapper over the filling and seal to form a dumpling.
- Steam the dumplings over high heat for 30 minutes, or until the dough becomes translucent and the filling is cooked through.
