Ba-Wan is a popular Taiwanese street food, often referred to as Taiwanese meatball. It's a gelatinous dumpling made from a dough of rice flour, cornstarch, and sweet potato starch, filled with a savory stuffing.
Ingredients - Serves 4
- White pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Bamboo shoots - 1/4 cup, diced
- Shiitake mushrooms - 1/4 cup, diced
- Ground pork - 1/2 cup
- Water - 2 cups
- Sweet potato starch - 1/2 cup
- Cornstarch - 1/2 cup
- Rice flour - 1 cup
Let's Get Started
- Combine the rice flour, cornstarch, and sweet potato starch in a bowl. Gradually add the water, stirring until a dough forms.
- In a separate bowl, mix the ground pork, mushrooms, bamboo shoots, soy sauce, sugar, salt, and white pepper.
- Divide the dough into small balls and flatten each one into a disc. Place a spoonful of the pork mixture in the center of each disc.
- Fold the dough over the filling and seal the edges to form a dumpling.
- Steam the dumplings over high heat for 30 minutes, or until the dough becomes translucent.
- Serve the Ba-Wan with sweet and sour sauce or hot chili sauce.
