Avgolemono Soup

- Lemons - 3, juiced
- Eggs - 3
- Long-grain white rice - 1/2 cup
- Boneless, skinless chicken breasts - 2
- Chicken broth - 6 cups
Let's Get Started
- In a large pot, bring the chicken broth to a boil.
- Add the chicken breasts, reduce the heat to low, and simmer until the chicken is cooked through, about 20 minutes.
- Remove the chicken from the pot and set aside to cool. Once cool, shred the chicken into bite-sized pieces.
- Add the rice to the pot and simmer until tender, about 15 minutes.
- In a separate bowl, whisk together the eggs and lemon juice until smooth.

- Pour the egg-lemon mixture back into the pot, stirring well to combine.

- Cook for an additional 5 minutes, until the soup is heated through.
