Ingredients - Serves 4

Let's Get Started

  1. In a large pot, bring the chicken broth to a boil.
  2. Add the chicken breasts, reduce the heat to low, and simmer until the chicken is cooked through, about 20 minutes.
  3. Remove the chicken from the pot and set aside to cool. Once cool, shred the chicken into bite-sized pieces.
  4. Add the rice to the pot and simmer until tender, about 15 minutes.
  5. In a separate bowl, whisk together the eggs and lemon juice until smooth.
  6. Slowly ladle about 1 cup of the hot broth into the egg-lemon mixture, whisking constantly to prevent the eggs from curdling.
  7. Pour the egg-lemon mixture back into the pot, stirring well to combine.
  8. Add the shredded chicken to the pot and season with salt and pepper.
  9. Cook for an additional 5 minutes, until the soup is heated through.
