Let's Get Started

  1. In a large bowl, combine the cornmeal and salt.
  2. Pour the water into the bowl with the cornmeal and stir until there are no lumps.
  3. Let the mixture rest for 5 minutes to allow the cornmeal to absorb the water.
  4. Divide the dough into 8 equal portions and shape each portion into a ball.
  5. Flatten each ball between your palms to form a disc about 1/2 inch thick.
  6. Heat the butter in a large skillet over medium heat.
  7. Cook the arepas in the skillet until they are golden brown on both sides, about 5 minutes per side.
  8. Cut a slit in the side of each arepa and stuff with shredded cheese.
  9. Serve the arepas warm.
