Arugula and Grilled Vegetable Panini

Ingredients - Serves 2

Let's Get Started

  1. Preheat a grill or grill pan over medium heat.
  2. In a bowl, toss the sliced zucchini, yellow bell pepper, and red onion with olive oil, salt, and pepper.
  3. Grill the vegetables for 5-7 minutes, or until they are tender and slightly charred.
  4. Slice the ciabatta bread and spread pesto on one side of each slice.
  5. Place a slice of mozzarella cheese on the pesto side of half of the bread slices.
  6. Top the cheese with the grilled vegetables and arugula.
  7. Cover with the remaining bread slices, pesto side down.
  8. Heat a panini press or grill pan over medium heat.
  9. Place the assembled panini on the panini press or grill pan and cook for 3-4 minutes, or until the bread is toasted and the cheese is melted.
  10. Serve hot and enjoy!
