Arugula and Grilled Vegetable Panini
This delicious panini is filled with grilled vegetables, fresh arugula, and melted cheese.
Ingredients - Serves 2
- Arugula - 1 cup
- Fresh mozzarella cheese - 4 slices
- Pesto - 4 tablespoons
- Ciabatta bread - 1 loaf, sliced
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Red onion - 1/2, sliced
- Yellow bell pepper - 1, sliced
- Zucchini - 1, sliced
Let's Get Started
- Preheat a grill or grill pan over medium heat.
- In a bowl, toss the sliced zucchini, yellow bell pepper, and red onion with olive oil, salt, and pepper.
- Grill the vegetables for 5-7 minutes, or until they are tender and slightly charred.
- Slice the ciabatta bread and spread pesto on one side of each slice.
- Place a slice of mozzarella cheese on the pesto side of half of the bread slices.
- Top the cheese with the grilled vegetables and arugula.
- Cover with the remaining bread slices, pesto side down.
- Heat a panini press or grill pan over medium heat.
- Place the assembled panini on the panini press or grill pan and cook for 3-4 minutes, or until the bread is toasted and the cheese is melted.
- Serve hot and enjoy!
