Arugula, Quinoa and Roasted Vegetable Salad
A delicious and nutritious salad that is perfect for lunch or dinner
Ingredients - Serves 4
- Salt and pepper - to taste
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Roasted vegetables - 2 cups
- Quinoa - 1 cup
- Arugula - 4 cups
Let's Get Started
- Preheat oven to 400 degrees F.
- Toss the vegetables with olive oil, salt and pepper and spread on a baking sheet.
- Roast the vegetables for 20 minutes, stirring halfway through.
- Meanwhile, cook the quinoa according to package instructions.
- In a large bowl, combine the arugula, quinoa and roasted vegetables.
- In a small bowl, whisk together the olive oil and lemon juice.
- Pour the dressing over the salad and toss to combine.
- Serve immediately.
