Arugula, Quinoa and Roasted Vegetable Salad

  1. Preheat oven to 400 degrees F.
  2. Toss the vegetables with olive oil, salt and pepper and spread on a baking sheet.
  3. Roast the vegetables for 20 minutes, stirring halfway through.
  4. Meanwhile, cook the quinoa according to package instructions.
  5. In a large bowl, combine the arugula, quinoa and roasted vegetables.
  6. In a small bowl, whisk together the olive oil and lemon juice.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve immediately.
