Apricot Crumble Stir Fry

  1. In a small bowl, mix together the soy sauce, honey, cornstarch, and water. Set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the garlic and ginger, and cook for 1 minute until fragrant.
  3. Add the sliced bell peppers and red onion to the skillet. Stir fry for 3-4 minutes until the vegetables are slightly softened.

  6. In a separate bowl, combine the all-purpose flour, brown sugar, and cubed butter. Use your fingers to mix until the mixture resembles coarse crumbs.
  7. Sprinkle the crumble mixture over the stir fry and cook for 2-3 minutes until the crumble is golden and crispy.
  8. Garnish with chopped almonds and serve hot.
