Apricot Crumble Stir Fry
This delicious stir fry combines the sweetness of apricots with a crunchy crumble topping.
Ingredients - Serves 4
- Chopped almonds - 1/4 cup
- Butter - 4 tablespoons, cold and cubed
- Brown sugar - 1/4 cup
- All-purpose flour - 1/2 cup
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Honey - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Red onion - 1, thinly sliced
- Bell peppers - 2, thinly sliced
- Apricots - 8, pitted and sliced
Let's Get Started
- In a small bowl, mix together the soy sauce, honey, cornstarch, and water. Set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the garlic and ginger, and cook for 1 minute until fragrant.
- Add the sliced bell peppers and red onion to the skillet. Stir fry for 3-4 minutes until the vegetables are slightly softened.
- Add the sliced apricots to the skillet and cook for an additional 2 minutes.
- Pour the soy sauce mixture over the stir fry and stir well to coat the ingredients. Cook for another 2 minutes until the sauce thickens.
- In a separate bowl, combine the all-purpose flour, brown sugar, and cubed butter. Use your fingers to mix until the mixture resembles coarse crumbs.
- Sprinkle the crumble mixture over the stir fry and cook for 2-3 minutes until the crumble is golden and crispy.
- Garnish with chopped almonds and serve hot.
