Apricot Crumble Pie
This delicious apricot crumble pie is made with fresh apricots and a buttery crumble topping.
Ingredients - Serves 8
- Chopped almonds - 1/2 cup
- Rolled oats - 1 cup
- Brown sugar - 1/2 cup
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/4 teaspoon
- Cinnamon - 1 teaspoon
- All-purpose flour - 1/4 cup
- Lemon juice - 1 tablespoon
- Granulated sugar - 1/2 cup
- Apricots - 6 cups, pitted and sliced
Let's Get Started
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced apricots, granulated sugar, lemon juice, flour, cinnamon, and salt. Toss until the apricots are coated evenly.
- Transfer the apricot mixture to a 9-inch pie dish.
- In a separate bowl, combine the cold cubed butter, brown sugar, rolled oats, and chopped almonds. Use your fingers or a pastry cutter to mix until the mixture resembles coarse crumbs.
- Sprinkle the crumble topping evenly over the apricot mixture.
- Bake for 40-45 minutes, or until the crumble topping is golden brown and the apricots are bubbling.
- Remove from the oven and let cool for at least 15 minutes before serving.
