Apricot Crumble Curry
This unique and flavorful curry combines the sweetness of apricots with a crunchy crumble topping.
Ingredients - Serves 4
- Chopped almonds - 1/2 cup
- Cinnamon - 1 teaspoon
- Brown sugar - 1/2 cup
- Flour - 1 cup
- Butter - 4 tablespoons, cold
- Salt - To taste
- Lime juice - 1 tablespoon
- Brown sugar - 2 tablespoons
- Vegetable broth - 1 cup
- Coconut milk - 1 can (14 ounces)
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Apricots - 1 pound, pitted and halved
Let's Get Started
- Preheat the oven to 375°F.
- In a large skillet, heat some oil over medium heat. Add the onion, garlic, and ginger. Cook until the onion is translucent.
- Add the curry powder and cook for another minute.
- Add the apricots, coconut milk, vegetable broth, brown sugar, lime juice, and salt. Stir well and bring to a simmer. Cook for 10 minutes.
- In a separate bowl, combine the butter, flour, brown sugar, cinnamon, and chopped almonds. Use your fingers to mix until crumbly.
- Transfer the apricot curry to an oven-safe dish. Sprinkle the crumble mixture evenly over the top.
- Bake for 20-25 minutes, or until the crumble is golden brown and the curry is bubbly.
