These delicious apricot cobbler ravioli are a unique twist on traditional cobbler. The sweet apricot filling is wrapped in a delicate pasta dough and served with a warm cinnamon sauce.
Ingredients - Serves 6
- Cinnamon sugar - 2 tablespoons
- Butter - 2 tablespoons, melted
- Water - 1/4 cup
- Eggs - 2
- Salt - 1/2 teaspoon
- All-purpose flour - 2 cups
- Cinnamon - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Sugar - 1/2 cup
- Apricots - 2 cups, pitted and chopped
Let's Get Started
- In a saucepan, combine the chopped apricots, sugar, lemon juice, and cinnamon. Cook over medium heat until the apricots are soft and the mixture has thickened, about 10 minutes. Remove from heat and let cool.
- In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually mix in the flour until a dough forms. Knead the dough for a few minutes until smooth.
- Divide the dough into two equal portions. Roll out each portion into a thin sheet on a floured surface.
- Place teaspoonfuls of the apricot filling onto one sheet of dough, leaving space between each filling. Brush the edges of the dough with water.
- Cover the filling with the second sheet of dough. Press down around each filling to seal the ravioli. Use a ravioli cutter or a knife to cut out individual ravioli.
- Bring a large pot of salted water to a boil. Cook the ravioli in batches for about 3-4 minutes, or until they float to the surface. Remove with a slotted spoon and transfer to a serving dish.
- In a small saucepan, melt the butter. Stir in the cinnamon sugar until well combined. Drizzle the cinnamon sauce over the cooked ravioli.
- Serve the apricot cobbler ravioli warm and enjoy!
