Middle Eastern Manakish Zaatar
Manakish Zaatar is a traditional Middle Eastern flatbread that's topped with a mixture of za'atar and olive oil. It's a popular breakfast dish in Lebanon, Syria, and Palestine.
Ingredients - Serves 4
- Za'atar spice mix - 1/2 cup
- Olive oil - 1 tablespoon for dough, 1/2 cup for topping
- Salt - 1 teaspoon
- Warm water - 1 1/4 cups
- Sugar - 1 teaspoon
- Dry yeast - 1 tablespoon
- All-purpose flour - 3 cups
Let's Get Started
- In a large bowl, combine the flour, yeast, and sugar. Add the warm water and stir until a dough forms.
- Add the salt and 1 tablespoon of olive oil, and knead the dough for about 10 minutes, or until it's smooth and elastic.
- Cover the dough with a damp cloth and let it rise in a warm place for about 2 hours, or until it's doubled in size.
- Preheat your oven to 500°F (260°C) and place a baking stone or inverted baking sheet inside to heat.
- Divide the dough into 8 equal pieces and roll each piece into a thin circle.
- Mix the za'atar spice mix with 1/2 cup of olive oil to make the topping.
- Spread a generous amount of the za'atar topping on each dough circle.
- Place the manakish on the preheated baking stone or sheet and bake for about 5 minutes, or until the edges are slightly golden.
- Serve the manakish warm, with fresh vegetables or yogurt on the side if desired.
