Pasta Alla Carrettiera
Pasta alla Carrettiera is a traditional Sicilian pasta dish made with garlic, tomatoes, and pecorino cheese.
Ingredients - Serves 4
- Fresh basil leaves - A handful, torn
- Salt - to taste
- Pecorino cheese - 100 grams, grated
- Red pepper flakes - 1 teaspoon
- Extra virgin olive oil - 4 tablespoons
- Cherry tomatoes - 500 grams, halved
- Garlic - 4 cloves, minced
- Spaghetti - 400 grams
Let's Get Started
- Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic and red pepper flakes and cook until the garlic is golden.
- Add the cherry tomatoes to the pan and cook until they start to break down, about 5 minutes.
- Drain the pasta, reserving some of the pasta water. Add the pasta to the pan with the tomatoes and toss to combine.
- Add the pecorino cheese and a little pasta water if needed to create a creamy sauce. Season with salt.
- Serve the pasta topped with the torn basil leaves.
