Amarula Cheesecake
This is a rich and creamy cheesecake with a hint of coffee and the unique taste of Amarula Cream Liqueur.
Ingredients - Serves 8
- Dark chocolate - 100g, melted
- Hot water - 1 tablespoon
- Instant coffee granules - 2 teaspoons
- Amarula cream liqueur - 125ml
- Eggs - 3
- Sugar - 150g
- Cream cheese - 500g
- Butter - 100g, melted
- Digestive biscuits - 200g, crushed
Let's Get Started
- Preheat the oven to 180°C and grease a 23cm springform cake tin.
- Mix the crushed biscuits and melted butter and press into the base of the tin.
- Beat the cream cheese and sugar together until smooth.
- Add the eggs, one at a time, beating well after each addition.
- Dissolve the coffee in the hot water and add to the cream cheese mixture along with the Amarula. Beat until smooth.
- Pour half of the cream cheese mixture onto the biscuit base.
- Stir the melted chocolate into the remaining cream cheese mixture and pour over the first layer in the tin.
- Bake for 60 minutes, or until the cheesecake is set and the top is lightly browned.
- Allow to cool in the tin before removing. Serve chilled.
