Amarula Cheesecake

Ingredients - Serves 8

Let's Get Started

  1. Preheat the oven to 180°C and grease a 23cm springform cake tin.
  2. Mix the crushed biscuits and melted butter and press into the base of the tin.
  3. Beat the cream cheese and sugar together until smooth.
  4. Add the eggs, one at a time, beating well after each addition.
  5. Dissolve the coffee in the hot water and add to the cream cheese mixture along with the Amarula. Beat until smooth.
  6. Pour half of the cream cheese mixture onto the biscuit base.
  7. Stir the melted chocolate into the remaining cream cheese mixture and pour over the first layer in the tin.
  8. Bake for 60 minutes, or until the cheesecake is set and the top is lightly browned.
  9. Allow to cool in the tin before removing. Serve chilled.
